We have released an improved version of MP3 my MP3 sound recorder with an improved interface design and added functionality for scheduled recording, now under a tab of it's own.

Mp3myMp3 Sound Recorder saves audio directly to mp3 or wav. If you can hear it you can record it!
I like the scheduled recording option but it would be even more useful if there was an option to set specific days.
